Offal Party with CSU Ag Innovation Center
The Offal Party is a mission to build domestic demand for organ meats and hides through the creation of new, crave-worthy food and agtech businesses. The United States has exceptionally low consumption of organ meats relative to other countries, which can make it challenging for small- to mid-sized producers and processors to find markets for their offal, so much of the organ meats from this sector go to the landfill. The Offal Party provides opportunities for consumers to try offal prepared by excellent chefs from around the world. Join us to explore Mexican-inspired offal dishes at this one-of-a-kind event. Dishes will be created by Sabor Comunitario Program. Led by Sandra Ruiz, this program is teaching 20 entrepreneurs in the north Denver area to incorporate offal into their restaurant food concepts to drive a domestic market for offal.
Colorado Food + Ag Regenerative Transition Policy Mixer with Senator Cleave Simpson
Building on the momentum of the Regenerative Agriculture Tax Credit bill (SB24-152) from the 2024 Colorado legislative session, we’re joining forces to co-create and refine new legislation for a more regenerative food and agriculture system. This conversation will be part of a series of dialogues hosted across the state to coalesce the needs of all stakeholders to inform the upcoming 2025 Colorado legislative session. Join us to share your input about how to define ‘regenerative’ for legislative and funding purposes, identify transition pathways, generate momentum, and learn about how to advocate at the state level and beyond.
